This Summer has been extra hot here in Kansas. We’ve had a full week of 100 degree weather. And I don’t know about you, but when the temperatures are really hot like that, I don’t feel like eating anything unless its frozen or a cold drink!

So we’ve swapped out our afternoon snack for homemade popsicles most days. The great thing is, you can make them any way you like! Swapping out typical ingredients for healthier options!

What You Need For Greek Yogurt Fudgesicles

ingredients

yogurt– using full fat Greek yogurt will make your popsicles more creamy and less icy. Plain, vanilla or honey yogurt will work in this recipe. If you use sweetened yogurt, leave out the honey in this recipe.

honey– honey for sweetening the yogurt. Adjust the amount of honey to your taste.

unsweetened cocoa powder – cocoa powder gives this recipe a wonderful chocolate flavor without adding very many calories!

heavy whipping cream– adding heavy whipping cream to homemade yogurt popsicles will make them extra creamy.

espresso powder – espresso powder is optional but if you have some on hand. Adding a little bit brings out a more rich chocolate flavor

vanilla extract – its optional to add vanilla but it does add a more delicious flavor.

How to make greek yogurt popsicles

Blend– With a stand mixer or handheld beaters, beat the heavy whipping cream until soft peaks start to form. You want to be able to see shapes in the whipping cream, but not stiff peaks.

Combine– In a medium mixing bowl, stir the cocoa powder, yogurt, honey, and whipping cream together until the mixture is smooth. Add in the vanilla extract and espresso powder if you wat to use them. Don’t over mix.

Pour– Spoon the chocolate mixture into the molds, tapping them on the counter to make sure there aren’t any air pockets left. Fill the molds leaving about 1/2 inch of empty space at the top for the popsicles to expand in the freezer.

Add Sticks– Stick the popsicle sticks in to the mold so that there is about 1.5 inches of the stick still showing on top of the mold.

Freeze– Set the molds in the freezer and let the popsicles harden for at least 4 hours. 8 hours is better.

Remove From Molds– Loosen the popsicles from the molds and enjoy!

To Serve– Remove the popsicles immediately before eating them. Loosen the molds by running them under warm water for 15 seconds or until the popsicles can slide out easily.

To Store– Popsicles can be kept in the freezer inside the molds for up to 2 weeks.

Substitutions – Maple syrup can be used instead of honey and vanilla or honey flavored yogurt can be used in place of plain Greek yogurt.

To make it easier to get popsicles out of a batch type mold, fill your sink with about 4 inches of room temperature water and set the mold in the water until the popsicles have loosened enough to slide them out easily. It usually only takes about 15 seconds.

  • 1/3 cup heavy whipping cream
  • 1/2 cup honey
